Hey, thanks, you guys that have added posts since I last weighed in.
Starting with the oldest first,
BP: thanks for the elucidation, Bud. It all sounds mega-delish.
Charlie: The Nixon Casserole sounds scrumptious> Wonder if Pat fixed it for him or had the kitchen staff do it.
OpticalGuy: Sounds like a treasure of a restaurant (The Merimac) -- I hope it still is in business because places that serve old-style cooking competently are in short supply. With regard to pork, I remember a little shack of a restaurant in Galveston, Texas that served up what amounted to pulled pork BBQ sandwiches. They were incredible and absolutely unique in taste. <sigh>

Saturday: "Just as interesting to note were the things she DIDN'T cook: Tex-Mex, Chicken and Dumplings, Pizza ...". That's alright, the list of things she DID cook makes my mouth water uncontrollably.
Ryan: my Texas pardner. I remember fish croquets! When my Mom made them, they were specifically
salmon
croquets. Meh. And she made potato salad the old fashioned way, fairly basic, but always with onions, pickles, mayo, and mustard, and hard-boiled eggs. A fresh bowl of the stuff was Starch Heaven.
I eat at one of the local (Houston) Whataburgers almost on a daily basis. They are the best! I get a breakfast of an (fried) Egg Sandwich with mayo, lettuce, tomatoes and pickles. Add a small order of fries, and it is the best fast food breakfast I have ever had.
And, homemade fried chicken -- nothing like it in the world.
