My Mom (and her Mom) were both fabulous cooks.

My favorite "Mom" creations were her Christmas English Toffee (best in the world) and all-homemade pizza (cheese/sausage/mushroom). People used to give her 'orders' for them both!


She also made a dinner entree that we called "Richard Nixon's Favorite" that she got out of a magazine. It was incredible, and I haven't had it in years. According to what I have found on the internet, this is the recipe...(though she didn't "dice" the chicken, hers were more like 2"-3" chicken "medallions")...

Nixon Casserole

2 packages frozen broccoli
1 can cream of mushroom soup
2 beaten eggs
1 cup sharp cheddar cheese, grated
2 tbsp. chopped onion
1 cup mayonnaise
2 boneless chicken breasts, cooked and diced
Cook broccoli and drain. Mix other ingredients and layer over broccoli,
forming two layers. Place in casserole dish and bake 25 to 30 minutes at
375 degrees.
