Me, too - love Monsters are Attacking Tokyo!  Asked Stuart once if he'd ever consider doing a second edition, and he said it was up to the folks who originally published it.

The problem with doing a complete Japanese fantasy, horror and Sci-Fi tome is that there's so many damn movies to cover.  Probably a better idea to separate genres, or different time periods, into different books.  For instance, I'm currently reading David Kalat's terrific book J-Horror, which covers the current horror offerings such as Ring, Ju-On, Uzumaki, Pulse, etc.  Attempting to cover all fantastic films from Japan would be too daunting a task.
