Tony Stark's father will be involved in the super soldier program in Cap's movie, giving Tony and Cap something to bond over. The Cap movie would need an Indiana Jones style Macguffin. Thor's hammer maybe? And for the big third act battle royale, how about an Asgardian invasion of earth? Manipulated by Loki of course. There was a story arc in Thor in the early 70's by Gerry Conway and John Buscema that had a big army vs. Asgard finale that would be very cool in a movie. The Asgardian Invasion finale is probably wishful thinking given the realities of movie budgets, but I'll bet I'm right about the other things.

For Iron Man, I don't think it's out of line to think that maybe an audience with no familiarity of the character outside the movie, where he's basically James Bond with bigger gadgets, might reject a push to add overt fantasy elements into the series. I think that was a legitimate concern, but one that was solved by introducing the other main Avengers in their own movies where all the work of selling their conceits would be taken care of so they could be dropped into one movie together ready to go.
